5 ways with beef

You don’t need to be a five-star chef to create hearty, beef-focused meals that feel a little fancy. We’ve pulled together five simple combos that have been prepared with care on our end, so all you have to do is crank up the stove, oven or barbecue and serve a fantastic meal. The fact that they’re so easy to get on the table can be our little secret.

1. Dinner for two

This is a really special, steak-house-inspired meal. Our Chateaubriand is a gorgeous, 14-ounce steak cut from the centre of the tenderloin to make it extra-succulent — and it’s seasoned to perfection. We recommend cooking it to a juicy-pink medium-rare. Once the meat is done, make a quick pan sauce: Place the pan you used to roast the meat on a heated burner and add some stock or wine to deglaze, scraping up those tasty browned bits with a wooden spoon or spatula. (They add irresistible flavour to sauces.) Let the liquid cook down for a few minutes, and then whisk in a dab of Dijon mustard. Add a generous chunk of cold butter and whisk vigorously until the sauce is thickened, glossy and rich-tasting. You can add a handful of chopped fresh herbs if you have any on hand. Simply keep the sauce warm in the pan while you slice and plate the meat.

And what’s a steak dinner without sides? Classic Stuffed Potatoes are right at home alongside your Chateaubriand. Serve with a dollop of sour cream and fresh chives sprinkled on top. They’re like regular baked potatoes, only better — and with a tasty, crispy top!

In fact, we slow-braise it for 10 hours in a rich, flavourful gravy so you can get down to the serious business of eating in just 30 minutes (with a little help from your microwave). It’s a foolproof dish that turns out perfectly every single time. While the roast is heating, warm up our flavourful, hearty, gluten-free Sweet Potato Mash, which is blended with real cream, butter, brown sugar, maple syrup and warming spices. Bistro-Style Green Beans — tender-crisp and picked at peak freshness — are lightly seasoned with EVOO, garlic and sea salt, and make a satisfying sidekick. 

3. DIY steak frites

Our 21-day-aged New York Striploin Steaks are delicious no matter how you cook them — on the stovetop, under the broiler or on the barbecue. (Tip: That pan sauce we made for our Chateaubriand, above? You might want to whip that up for this dish, too.) Serve your perfectly cooked steaks alongside crispy Crispy Fries for an ultra-simple, at-home take on restaurant-style steak frites. A lightly dressed green salad is the perfect, fresh way to finish off this meal.
